I expect, certainly n WW1 that the requirements were, shall we say, fluid. My Grandfather, on my mothers side, was well over 6 foot by 16 but was drafted into the British army at 18 yrs old, but my grandfather on my fathers side joined the New Zealand army in 1915 as a 16 year old and was a shade under 5'4". Still, they seemed happy to take him!

Maybe by then they realised hight was great in a line-out, but not so good in a trench...

No I was thinking that, would suck to be a 6 footer in a trench

What is the explanation for the shorter NCOs often seen at the edge of ranks of Guards on parade? I would have thought they would be same or equal height of the guardsmen. Excuse my ignorance here.

On parade's such as the Troop left and right of the Company, front rank will be the Company Sergeant Major and the Company Quarter Master Sergeant. One at each end. Regardless of size. If i remember correctly, maybe Andy might be able to add to this.
