Default ORs' field service cap, (forage, Indian pattern),

I've found references in 1908 to sealed patterns of "other ranks' field service cap, (forage, Indian pattern)".
Would I be correct in thinking these were the forefathers of the coloured FS cap (chip bag style) worn with Undress uniform later in the century?

Yes. These side caps continued to be worn in India etc when the UK based Army had adopted the brodrick and then the peaked cap.

The style had a resurgence in the last 1930s with the adoption of the khaki side cap and the multitude of coloured regimental side caps.
