I only know of two publications covering coloured field service or side hats.

In 1941 George Philip & Son published Regimental Badges and Service Caps in which the caps are illustrated in colour. Copies are currently available on ABE Books.

In 2002 the Military Historical Society's Special Number was Coloured Field Service caps - Infantry by DG Glover. Copies for sale price £5 on the Society's website.

If anyone knows of other sources I'd be pleased to hear about them.

I'm still waiting to get one, though I don't know how much of its content is duplicated in the other publications that have been mentioned.
